- Chop brocoli into smaller size and slice leek and shallot
- Boil a pot of water, blanch brocoli for 4 mins or until soften, take out he brocoli
- In another pot, add olive oil and stir fry leek and shallot until soften and a little bit caramelized
- Add The veg stock and blanched brocoli, cook for a 3-4 mins
- Add bread crumb, blend until thick and smooth, add a splash of water if desired or more bread crumb for thicker texture
- Season to taste with salt and pepper
- Ladle the soup into bowls, top with a swirl of olive oil and a crack of black pepper
- Done
