Steps

  1. Soften butter and mix in powdered sugar and sea salt.
  2. Gradually mix in whole egg until combined.
  3. Sift and mix in cake flour and powdered almond.
  4. Wrap dough and chill for 1 hour.
  5. Prepare parchment paper to fit tart tin bottom and sides.
  6. Remove dough from fridge and press to slightly loosen.
  7. Roll dough between parchment to 3mm thickness.
  8. Press rolled dough into tart tin.
  9. Dock the dough and line it with paper, then add weights.
  10. Blind bake at 160°C for 40 minutes. Remove weights.
  11. Prepare cheese cream by mixing softened cream cheese with sugar until smooth.
  12. Whisk in egg yolk, sour cream, and heavy cream until combined.
  13. Strain the cheese cream mixture.
  14. Pour cream into baked tart shell.
  15. Bake at 140°C for 25-30 minutes.
  16. Cool slightly then remove tart from tin.
  17. Done
