Steps
- Soften butter and mix in powdered sugar and sea salt.
- Gradually mix in whole egg until combined.
- Sift and mix in cake flour and powdered almond.
- Wrap dough and chill for 1 hour.
- Prepare parchment paper to fit tart tin bottom and sides.
- Remove dough from fridge and press to slightly loosen.
- Roll dough between parchment to 3mm thickness.
- Press rolled dough into tart tin.
- Dock the dough and line it with paper, then add weights.
- Blind bake at 160°C for 40 minutes. Remove weights.
- Prepare cheese cream by mixing softened cream cheese with sugar until smooth.
- Whisk in egg yolk, sour cream, and heavy cream until combined.
- Strain the cheese cream mixture.
- Pour cream into baked tart shell.
- Bake at 140°C for 25-30 minutes.
- Cool slightly then remove tart from tin.
- Done
