- Preheat your oven to 165°C.
- In a large mixing bowl, combine the rolled oats, coconut flakes, chopped pecans and pumpkin seeds. Mix well.
- In a separate mixing bowl, whisk together the maple syrup and vegetable oil until well combined.
- Pour the maple syrup mixture over the oat mixture and stir until everything is evenly coated.
- Spread the granola mixture out onto a large baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, or until the granola is golden brown and crispy.
- Remove from the oven and let cool completely on the baking sheet.
- Once cooled, mix in raisins and store the granola in an airtight container at room temperature for up to two weeks.
