  1. Preheat your oven to 165°C.
  2. In a large mixing bowl, combine the rolled oats, coconut flakes, chopped pecans and pumpkin seeds. Mix well.
  3. In a separate mixing bowl, whisk together the maple syrup and vegetable oil until well combined.
  4. Pour the maple syrup mixture over the oat mixture and stir until everything is evenly coated.
  5. Spread the granola mixture out onto a large baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 20-25 minutes, or until the granola is golden brown and crispy.
  7. Remove from the oven and let cool completely on the baking sheet.
  8. Once cooled, mix in raisins and store the granola in an airtight container at room temperature for up to two weeks.
