Steps

  1. Fill a pot with water
  2. Depending on how much water you use, add around 1% salt of the weight of water
  3. With low heat, add the potato (skin-on) to the pot and cook for 20 minutes or until a fork can easily poke through
  4. Drain the potato and let them cool down in the fridge for 5 minutes
  5. Cut the potato in to 1cm slices
  6. In another pot, add enough oil to submerge all the potato.
  7. Before turn on the heat, add all potato the pot of oil.
  8. With medium to low heat, fry the potato for 20 minutes or until all sides are completely golden and crispy
  9. When it's ready, drain the potato and season with salt, let cool down for 2 minutes
  10. After 2 mins, toss potato in clarified butter and serve
  11. Done

Remark

  • If you have the time, you can even boil the potato the day before.
