For boiling the potato
For seasoning
Steps
- Fill a pot with water
- Depending on how much water you use, add around 1% salt of the weight of water
- With low heat, add the potato (skin-on) to the pot and cook for 20 minutes or until a fork can easily poke through
- Drain the potato and let them cool down in the fridge for 5 minutes
- Cut the potato in to 1cm slices
- In another pot, add enough oil to submerge all the potato.
- Before turn on the heat, add all potato the pot of oil.
- With medium to low heat, fry the potato for 20 minutes or until all sides are completely golden and crispy
- When it's ready, drain the potato and season with salt, let cool down for 2 minutes
- After 2 mins, toss potato in clarified butter and serve
- Done
Remark
- If you have the time, you can even boil the potato the day before.
